I was so excited to participate in the California Grapes Healthy Snack Challenge. I have been trying to come up with a recipe that would be a great snack not just for me, but for my kids too. When I went grocery shopping I decided the Black California Grapes looked the best, and went from there.
I decided to do a play on Peanut Butter and Jelly sandwiches. I love grape jelly on my sandwiches.
A Play on PB&J Muffins
Ingredients:
1C flour
1tsp baking powder
1/2 tsp baking soda
a pinch of salt
1/2 C brown sugar
1/4C low-fat vanilla yogurt
1 Tbsp veg oil
3 Tbs peanut butter
2 egg whites
1-1/4 C pureed black grapes (the measurement is after they are pureed)
1/4tsp sugar
Mix together dry ingredients.
Add to dry ingredients and stir-don't over mix
Puree black grapes with 1/4tsp sugar in food processor (you need a little over 1 C) and fold in to the batter until fully incorporated.
Make into any size muffins you would prefer, Bake at 400* for about 12 mins.
Remove from pans and let cool on wire rack.
Makes about 15 regular size muffins.
I had so much fun with this challenge and "inventing" a healthy recipe. These muffins were a big hit with my kids. I want to make them again using green grapes just for fun. I might even get more adventurous and make a filling for them using the grapes too. The possibilities are endless.
